We were staying at the hotel and joined them for the Pachamanca farm lunch. What an experience, the food was excellent, friendly chef and staff, we had a wonderful time. Highly encourage people to give this a try.

The Pachamanca/farm lunch was just top notch, delicous meat and potatoes in a gorgeous organic farm. The tour around the farm and seeing the onsite distillery was just icing on the cake.

The organic farm of El Albergue was an unexpected treat. Located just outside of the main hotel grounds, it is worth visiting. It is home to the organic gardens that provide produce for their restaurants. It is also home to the Destilería Andina, their coffee roastery, and the Pachamanca lunch. The Pachamanca lunch experience was a fantastic way to check out the farm, distillery, and coffee roastery, and get a great lunch all in the same visit. Pachamanca is a traditional way of cooking using the earth as an oven. They use granite stones that have been heated to a very high temperature to cook potatoes, beans, and meats (chicken, pork, and lamb). The food is cooked directly on the rocks, covered with fresh herbs and wet canvas, then buried. It all cooks in just 15 minutes. This was much faster than I expected. The meat comes out with crispy skin, moist, and absolutely delicious. It is served with a salad of organic greens from their farm, a delicious vegetable bake, and a big pitcher of their house-made chicha morada (purple corn drink). The meal is finished with a shot of their anis liquor (made at the distillery) and a delicious dessert made fresh in the bakery at El Albergue. You get a chance to tour the farm, distillery, and coffee roastery during lunch. The host was gracious and well informed. It was a fantastic way to spend the afternoon. Just a note, you need to book the Pachamanca experience through the hotel at least a day in advance. The whole farm experience was one of the high points of my trip to Ollantaytambo.

Muy buena experiencia en el albergue (noble hospede) fui a almorzar pachamanca y de paso te hacen el recorrido por la tostadora de café y la destilería andina , lindo lugar, una opción diferente en Ollantaytambo

Aunque la administración es extranjera, los servicios y productos son de buena calidad. La pachamanca que es una técnica ancestral de cocción de alimentos en los Andes vuelve a la ávida en este lugar donde varias carnes y papas serán cocidas con piedras calientes. Bonito ambientes, muy casual y con las 4 alpacas del sitio se puede pasar un momento genial en el valle sagrado.
